Producer Profiles

  • Berry’s Creek Cheeses – Barry and Cheryl produce cheeses of international acclaim. With sweet earthy flavours, creamy texture and rich on the finish. Purchase from local Gippsland Farmers Market’s and Leongatha IGA.
  • Mirboo North Pasture Feed Poultry – Ilan is rearing the Sommerslad Chicken on fresh pasture and grain. The birds take twice as long to grow producing a more flavoursome meat similar to the French Bress chickens. Purchase locally form Gippsland Farmers Markets.
  • Wattlebank Park Farm – Nadine is rearing a variety of organic free range livestock including the saddle back pig, producing tasty pork sausages. Purchase directly from the farm shop on Wednesdays, or Gippsland Farmers Market.
  • Fish Creek Mount of Olives – Mario and Eila planted their grove in 2000 producing award winning olives & oils. Purchased directly from the grove or Gippsland Farmers Markets.
  • Gippsland Mushroom Company – Anne-Marie and Chris grow intensely flavoured mushrooms especially the Swiss Browns, on a great site in Dalyston. Very short lag time from picking to our pizzas. Available from Gippsland Farmers Markets.
  • Prom Country Cheese – Family owned and run in the rolling green hills of Gippsland – Moyarra. Cheese door open during summer.
  • Tom & Amelia’s vineyard free range eggs, this is our children’s project. Eggs are available to purchase at cellar door.
  • Mirboo Farm specialising in growing premium garlic.

Wine Tasting

Sparkling Blanc De Noir 2015

Aromas of Strawberry and apple crumble on the nose. A rich palate with flavours of strawberry and green apple with grapefruit like acidity.

A versatile sparkling enjoyed as an aperitif or with food such as a cured salmon tartare.

Pinot Noir Rose 2017

Salmon pink in colour a perfumed nose of sweet strawberry and subtle musk a beautiful balanced palate with red fruits and savoury notes, finishing clean with a hint of sweetness tempering the acidity. A delightful easy drinking wine with or without food.

Premium Chardonnay 2016

Pale straw in colour with melon aromas on the nose a fine palate, flavours of green melon, lemon and citrus pith, a persistant finish with linear acidiy.

Perfect for simple white fleshed fish.

Collaborator Pinot Grigio 2017

A delicate bouquet of citrus salad with lifted floral notes, a fine palate of citrus and hints of honeysuckle, with fresh textural acidity complemented with mineral flavours persisting.

A versatile food wine, particularly suited to Mediterranean cuisine.

Premium Pinot Noir 2015

Garnet in colour with dark cherry and lifted spice on the nose, medium bodied with succulent red fruits complemented by savoury flavours and quality oak. A Balance of acidity, silky tannins and a long savoury finish.

Pair with roast pork or duck and mature hard cheese.

Reserve Chardonnay 2015

Straw yellow in colour, with a bouquet of white peach and pure cream, a textural wine both in terms of its viscosity and phenolic weight. A palate of Stone fruit flavours and citrus undertones with savoury nuances and a nice long persistant finish.

Pair with roasted free range poultry or pan fried salmon with beurre blanc sauce.

Collaborators Pinot Noir 2016

A bright fruit forward wine with strawberry and rhubarb on the nose, a palate of pretty red cherry flavours with a subtle infusion of fragrant herbs lingering and juicy acidity on the finish.

Pair with white mould cheeses or perfect with a gourmet pizza from our cellar door.

Premium Syrah 2014

A pungent nose of beetroot blackberry and red earth, a medium body consisting of dark fruits, dry herbs with a velvet palate carrying through to beautiful fine chalky tannins and white pepper finish.

Pair with a roast leg of lamb or beetroot and goat cheese risotto.

Heathcote Shiraz 2015

A deep Crimson colour, with blackcurrent and pepper on the nose, a concentrated palate of dark fruits briar and nutmeg with round tannins and savoury finish.

Pair this wine with grilled red meats.

Circa Pinot Noir 2015

Macerated red fruit on the nose, a full bodied Pinot palate of raspberry fruit, black olive, thyme, forest floor and oak, finishing with firm savoury tannins. Great cellaring potential.

Pairs well with blue cheese and braised meats.

Sparkling Shiraz

Black cherry and raspberry lifted nose. A fine bead of Chocolate and smokey coffee bean with fresh acidity and fine tannins.
